We thought it was time for a new normal in fast food, where quality and wellness are at the forefront.
We are bringing Japanese onigiri to Europe, but with a twist! Our puzo rice balls are totally untraditional and 100% fusion. We spent one year working on the 10-piece, globally diverse menu with the Rocking Chefs (Head Chef Ralf Jakumeit is awarded 16 Gault Millau points).
What we’re proudest of, though, is how we are doing it. Puzo Bar is presenting a new way to do fast food, where quality prevails. We are serious about our sustainability practices, which is why you won’t find drinks in plastic bottles or cans for sale. We serve tea and organic sodas from a hydro tap in paper cups instead. (& yes, bring your own bottles if you like!)
Our dream is to offer a new style of fast-food restaurant that fits in with life as we live it today. It’s fast food prep for busy schedules. It’s sustainable because that’s the right thing. It’s affordable because we all have bills. It’s gourmet because why not? It’s fusion because we’re an interconnected world. We also suffer from chronic wanderlust and use food to satisfy our urge to buy a plane ticket to anywhere.

Fine Fusion Onigiri
Creating the “puzo”.
What can we say? We love onigiri, they’re as versatile and satisfying as a sandwich, but we realized that funky, fusion onigiri choices are nowhere to be found. So we made our own with the acclaimed Bavarian cooking team, the Rocking Chefs. Our 10-piece menu embraces a diverse collection of global flavors emphasizing fine, wholesome ingredients and creative, gourmet cooking. Prepared by hand, the puzo fillings are little taste explosions and low in calories.
We Use Traditional Japanese Onigiri Rice
The fillings are the star of the show and the rice is the stage. Puzo Bar uses an Italian-grown variety of Koshihikari, a premium short-grain rice commonly used in Japan to make onigiri. With its natural sweetness and slightly gelatinous texture, the rice allows the flavor-packed fillings to shine. It is the combination of freshly cooked rice and filling that is essential to creating the perfect puzo.

A Tiny Carbon Footprint
Having an ethical, sustainable food cycle.
Once you have been to paradise and seen blankets of plastic garbage on the beach, it’s impossible to forget it. We are committed to running a fast-casual chain restaurant that rethinks what’s normal in food service.
Very Limited Plastic Waste
We don’t use plastic when it isn’t 100% necessary. The packaging, napkins, and cups are made from recycled paper materials, and they’re recyclable. We are even reluctant to serve utensils as any item that isn’t totally necessary will amount to a huge waste later.
Centralized Kitchen
By preparing our recipes in one central kitchen, Puzo Bar has greater control over food waste. Added bonus: the electricity and water usage are significantly lower.
No Drinks in Plastic Bottles or Cans
Soft drinks are convenient, but not environmentally-aware options. Thankfully, the Amsterdam-based company KRNWTR offers a smart solution.
KRNWTR installs a water-purification system to the local tap water that comes out in two spouts: one for crisp, flat water and the second for bubbly, carbonated water. What’s most innovative, though, is the organic syrup line. Simply choose your flavor syrup and fill up a paper cup with filtered flat or fizzy water.
Limited Food Waste
The Rocking Chefs prepare fresh ingredients by hand, utilizing as much of an ingredient as possible. The filings are then vacuum-packed and shock frozen in small portions limiting our food waste to small amounts.
