Rice
We use a very special rice for our onigiri. It’s an Italian-grown variety of Koshihikari, a premium short-grain rice named after the Koshi Province of Japan (in the present-day Hokuriku region).
There, rice cultivation is an old tradition and rice from Koshi province is highly regarded for the advanced milling techniques used.
The characteristics of the grains are exquisite: pearly white color, slightly gelatinous texture, and natural sweetness. Although Koshihikari rice can be eaten alone, it’s perfect for puzos as it complements their many fusion flavors.
Japanese rice farmers brought this popular rice variety to Italy, where it is now cultivated using the same techniques that the Koshi region is famous for. Its cultivation in Europe allows us to source Koshihikari of high quality without costly, polluting ship freighting.
King of Salt
The magic ingredient in the puzo onigiri fillings is the King of Salt line created by Chef Ralf.
Located 800 meters below ground in Bad Essen, Germany, is an ancient bed of sea salt. Scientists date the area to around 220 million years ago. The ocean water dried out long ago, and the sea salt that remains is unlike any other, high in minerals and with incredible flavor.
With this special sea salt, Chef Ralf uses this special sea salt to infuse flavors into a line of liquid salt sprays. The King of Salt line comes in many flavors and adds a unique quality to any recipe.
Every PUZO recipe features King of Salt, with varieties including King of Salt Asia (sweet and peppery), King of Salt Beer (earthy), and King of Salt Pimpinella Anisum (pastis). Explore our menu descriptions to see which salt is used in each puzo.

Coconut Blossom Sugar
If sugar could wear capes, then coconut blossom sugar would be wearing a bright, shiny red one. It’s a rich source of minerals (magnesium, potassium, zinc, and iron) and vitamins B and C, plus it contains antioxidants and amino acids. But the real reason we love coconut blossom sugar is that it has a lower glycemic index than other sugars and doesn’t wreak havoc on glucose levels in the blood.
Coconut blossom sugar is extracted from the nectar in coconut tree flower buds. The nectar is carefully heated until caramelized, then dried and crushed to have the consistency of sugar.

Dairy ingredients don’t appear often on the PUZO menu.
When we do use dairy, it’s organic and hormone-free.

Nori Leaves
Dried seaweed is one of the healthiest foods to consume. It’s a rich source of fiber, iron, and iodine and vitamins A, B, C, and E. It is proven to help with thyroid functionality and support good gut health, and it’s chock-full of antioxidants that are good for the heart. That’s not all: Because studies show that nori reduces inflammation, fat levels, and insulin sensitivity, there’s reason to believe it may even help with diabetes.
There are different grades of nori on the market. The lowest grade, classified as the color “green” or letter “D,” delivers few of these health benefits. The texture is also poor. When added to rice, it loses any crispiness, turns gummy, and is tough to chew.
Puzos are served with gold-grade nori leaves, the best grade available. High in nutrition and crispy in texture, they melt in your mouth and provide the perfect flavor balance to our fusion fillings.
For the best dining experience, we recommend waiting to wrap your puzos with nori until right before it’s served.

The company adheres to stringent quality-control methods, with all fish on the market having passed a thorough multisensory examination (touch, smell, and taste) by experienced controllers.

Outside of Munich, Germany, is a team of urban fishers who raise shrimp according to high ethical and sustainable standards. Their sashimi-grade shrimp is bred without extra chemicals or glazes. The tempeh used in the vegan Green God Puzo is organic. Tempeh is a rich plant-based protein made from fermented soybeans. Originating in Indonesia, it is densely packed with protein and has a firm texture that makes it ideal for sautéing or grilling. Flavorful and easy to cook with, it’s our favorite vegan protein!
