The recipe for Hanoi Pork is full of complex, delicious flavors and ingredients. It balances sweet and sour tastes and showcases a garden of fresh, GMO-free herbs and vegetables—two qualities that have become the hallmarks of Vietnamese cuisine.

At the heart of our recipe is a special cut of pork called oberschale in German. (There isn’t an exact translation in English, but it’s best described as the top cut of the thigh.) It’s considered the best cut of pork because it’s the most tender and flavorful. 

  • The oberschale is cut in strips, sprayed with King of Salt Asia (sweet and peppery), and sautéed with onions, squid sauce, and coriander seeds.
  • Fresh coriander leaves are picked, chopped, and mixed with finely diced red Thai chilis.
  • Peanuts are roasted in the oven, chopped, and mixed in with the pork and veggies.
  • The final additions: a little sweetness from coconut blossom sugar and freshness from de-seeded cucumbers.

The Hanoi Pork Puzo is wrapped in a nori leaf for the perfect handheld food.
