About the Recipe
To guarantee the best quality of fish, we use a ceviche technique to cook the fish, while keeping the texture of raw salmon to replicate a tartare. This method is called denaturation, and it uses acids to cook the fish instead of heat.
We use the finest grade of salmon, Ikarimi salmon. It’s supple, melts in your mouth, and has a beautiful natural color
At the heart of our recipe is a special cut of pork called oberschale in German. (There isn’t an exact translation in English, but it’s best described as the top cut of the thigh.) It’s considered the best cut of pork because it’s the most tender and flavorful.
- The salmon is cubed, cooked ceviche-style, and sprayed with King of Salt Asia.
- Sugar snap peas and chervil herbs are diced.
- These three ingredients are mixed together.
- Separately, the passion fruit puree is made with King of Salt Szechuan Pepper and lemon oil, and then blended until the desired proportions are reached.
